Rain and I scrapped

Yesterday was sunny and nice.  Not warm, but not freezing either.  It was nice enough to get out and walk the dogs for awhile.  Today, I woke to rain and frozen sidewalks and roads.  Not such a great thing to walk dogs on.  A little slippery.  The good news, it's not snowing!  lol.  I'm so ready for spring, yet I know it's only January.  Trying to keep myself busy with planning the garden, thinking about what I want to do this summer, working on the other blog, and the normal things like cleaning, and work.  I really need to start getting up earlier, because I go to work at 1 in the afternoon, I sometimes sleep until 8.  I need to start setting my alarm for 7 and getting up!  Another thing, I need to stop playing on the computer so much.  I spend WAY to much time on this thing. 

Anyway, I finally scrapped a page on Sunday.

A little of this and a little of that.

Well, I finally did it.  I broke down and bought a small digi camera to carry around with me.  I LOVE my Canon Digital Rebel, but for just having with me all the time, it's way to big.  So, I got the Photosmart Mz67.  Got a great deal on it.

It was $139.00 at Staples.  I can't complain about that price and it's for those times when I don't have my rebel.  So I'm pretty happy with it.  I'll have to share a photo when I get one.

Long time no write....

I've been, busy....but I'm not sure with what.  Does that ever happen to you?  I'm behind in most of my blog reading.  It might be because I've been working on getting up to my 5000th post on 2 P's.  It's about time!  I've only been a member since 2001, you'd think I'd be there already, as much as I talk/type.  Yeah... I should have had 5000 the second day.  LOL

Any hoo... I've been working and reading and planning the VC for Susans Scrapbook Shack .  I got some REALLY cute things for Raks.  I'm working on all the different fun things we're going to be doing!  If you want, stop by and crop with us, we're starting Friday and ending Sunday.  Should be a good time.

So I found these really cute brushes here.  I love fairies so I had to have  them.  Here's one of the brushes. Is this adorable or what?  They were so "cheap"  Go check them out!

I'm not sure I'll be able to actually post 365 days of pictures... but I'm going to try as of today. I still need more to catch up with the date, I'll do that this weekend.

I'm so glad that 2 Pea's is doing this photography "class" (at no cost) I'm really learning alot.  More than I thought I would.  This class makes understanding the camera so much easier.  It's remembering all the little details that I need to do.  Here's a shot I took with this weeks lesson on shutter speed.

I'm not sure why...but I've been thinking alot about baking!

I found this fantastic site with the coolest cakes!!  If you enjoy this kind of thing, you MUST check this site out!  These are the things I wish I could do!  So much fun!  Look at these fabulous colors!  It just LOOKS like something you'd love to eat or use as a center piece for decor and NEVER eat it.  I would have a hard time deciding what I wanted to do with it.  But I'd have fun trying to decide!  Here's the link to their site.  Check it out!  Pink Cake Box

Don't these look good?  I love red velvet cake.  Got the recipe from the food network.  I hope mine look this good when I'm done making them.  YUMMY!

Red Velvet Cupcakes with Cream Cheese Frosting

For the cupcakes:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda                            
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
Chopped pecans and fresh raspberries or strawberries, for garnish

For the cupcakes:
Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:
In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Garnish with chopped pecans and a fresh raspberry or strawberry.

Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.
